I get on salad kicks and add them to my menu. Amazingly my children enjoy a salad. I feel good about serving it knowing they are getting a nice serving of vegetables. It also stretches a meal because normally no one asks for seconds after filling up on a salad. Win/win for everyone! This one has fruit in it and you certainly could add some other veggies to the mix. I like it with Sweet and Sour Dressing or a Poppy Seed. This is a great gluten free recipe as well, just be sure your dressing is gluten free, and you are set!
Romaine Fruit Salad
- 2 stalks Romaine lettuce, torn
- 1 apple, chopped
- 1 pear, chopped
- 8 oz swiss cheese, cut into chunks
- 1/2 – 3/4 cup dried cranberries
By the way, I totally made up the name of this salad… if you have a better one let me know. I’m open for suggestions.
